Fig, Goats Cheese & Walnut Salad with a Honey Mustard Vinaigrette


Try this deliciously delicious simple salad idea from @lockdowncuisine to really get your palate juices flowing, and as a fab way to use our Honey Roasted seeds.

Serves 2.

Ingredients:

Munchy Honey Roasted seeds
75g goats cheese
2 figs, quartered
20g walnuts
120g rocket & pea shoots (or your favourite leaf salad mix)

For the Vinaigrette:

1 tsp Dijon mustard
1 tsp honey
5 tbsp extra virgin olive oil
1/2 lemon, juiced
salt & pepper

Method:

Begin by making your vinaigrette mixing together your mustard, honey, and lemon juice. Once combined stream in your oil and season to taste.

To a pan over low heat add your walnuts and toast for 2-3 minutes. Once toasted roughly chop and set aside. Slice your goat’s cheese into wheels and place in a baking dish. Grill for 3 minutes to caramelise your cheese.

Dress your salad with the vinaigrette and top with the fresh figs, goats cheese walnuts, and a sprinkle of seeds.
