Here’s a sure-fire home baking winner – Oat Seeded Cookies dipped in Chocolate.
Our great friend Gopi loves our seeds so we sent her some packs and she came up with this gorgeous ever-so-easy recipe for you to try at home.
As a Registered Nutritionist Gopi knows too just how good our yummy seed mixes are for us all – and if we can make them into delicious sweet treats like this, then it’s a win win.
Makes 8.
Ingredients:
1 cup oats
1/2 cup of our Warm Cinnamon flavour seeds
1/2 cup of wholemeal flour
1/2 cup of butter/ vegan spread/coconut oil
1/4 cup honey or maple syrup
Method:
Pre-heat oven to 180 degrees Celsius, gas mark 4. In a large bowl add the dry ingredients and mix. Melt the butter or vegan spread in a pan along with the syrup. Pour the wet mixture into the dry mixture and mix until combined.
Grease a baking tray and add a scoop of the mixture and flatten. Alternatively place a small sized round cutter on the tray and add a tbsp of the mixture into the round cutter and pat with your fingers. Gently lift the cutter to get the round shape. You might find the mixture is crumbly – you can also use your hands to make them into a round ball and flatten.
Bake the cookies in the oven for about 15 minutes, until golden. They will become hard once cooled.
Dip half the cookies in melted chocolate of your choice, allow to set and keep in an air tight container.
