Roasted Cauliflower, Papaya & Red Onion Salad

This fresh roasted cauliflower, papaya and red onion salad is super-speedy to make and packed full of exciting flavours. It is also packed full of nutritional goodness perfect for boosting your immunity and energy levels in the winter months.

Ingredients:

1/2 cauliflower separated into florets
1/2 deseeded and finely sliced papaya
1 finely slice red onion
2 handfuls of rocket
1 tbsp Mild Chilli Seeds
1 tbsp Mega Omega Seeds

For the dressing:

juice of 1 lime
2 tbsp olive oil
1 tsp agave or maple syrup
1 tbsp soy sauce

Method:

Preheat your oven to 180C. Roast the cauliflower with a tsp of oil, sea salt and black pepper for 30 minutes, allow it to cool. Whisk together the dressing ingredients until well combined. To assemble, put all of the veggies and papaya on a plate, drizzle over some of the dressing and sprinkle over the Munchy Seeds.
