Roasted Squash & Mozzarella Salad

Healthy eating is also joyful eating in our opinion, and this fresh, delicious salad is no exception. Just a sprinkle of our super tasty Toasted Sesame Sprinkles brings all the flavours together, with the extra benefits of fibre and protein.

Serves 2 as a main, 4 as a side or starter

Ingredients:

1 medium butternut squash (or similar), peeled and sliced into crescent shapes (see image)
1 large ball of buffalo Mozzarella, drained
a mix of fresh salad leaves, rocket and salad spinach
2 tbsp of our Sesame Sprinkles
a drizzle of olive oil and a squeeze of lemon to serve
1 tbsp chopped fresh mint to garnish

Marinade:

1 small red chilli, finely chopped
2 cloves of garlic, crushed
1 tsp cinnamon powder
1 tsp cumin powder
1 tsp honey
4 tbsp olive oil
1 tbsp red wine vinegar
salt and pepper

Method:

Pre-heat the oven to 190C. Mix all the marinade ingredients together then in a bowl stir them well into the sliced squash.

Transfer to a baking dish and bake for 25 minutes or until tender. Cool for 15 minutes.

Arrange your salad leaves on a platter then spread the squash over the top. Place the buffalo Mozzarella in the centre.

Sprinkle with toasted sesame seeds, the chopped mint and a drizzle of olive oil with squeeze of lemon.

Enjoy with a crisp glass of white or a nice chilled drink.
