This is a delicious, go-to brunch favourite and so full of goodness, especially with the addition of our crunchy seeds.
1 ripe avocado, peeled and de-stoned
1 pinch dried chilli flakes
1/2 a garlic clove, finely grated
1/2 lime, juice only
extra virgin olive oil
2 slices sourdough or we have used rye bread
a sprinkle of our Toasted Tamari seeds
1 large ripe tomato, sliced to garnish
1 small handful of fresh coriander to make a little flavoured oil to drizzle
Finely chop the fresh coriander and stir into a tablespoon of olive oil. Season with salt and set aside.
Place the avocado in a bowl with the chilli, garlic, lime juice and salt and a drizzle of extra virgin olive oil. Mash with a fork to the desired consistency.
Make your toast then spread the avocado on top. Garnish with the sliced tomato, a sprinkle of seeds and then drizzle the coriander oil all over.
