Super Berry Granola

Make your Super Berry seed mix go further by turning it into this nutritious granola.
By mixing seeds with oats and coconut, you’ll create the kind of filling yet good for you granola that’ll be revisited every morning. Top some yogurt with it or replace your usual cereal with this lower sugar alternative for a better breakfast. Whilst we are on the topic of breakfast here are 3 ways to help accelerate weight loss with the first meal of the day.

Start with protein:

According to research by the University of Missouri, starting the day with protein leads to fewer cravings later in the day, meaning you are more likely to say no to that afternoon chocolate bar. Eggs and yogurt are both good choices.

Add berries:

Berries aren’t just exceptionally easy to mix in with that granola and yoghurt combo but it turns out they may also promote weight loss. A study carried out by King’s College London indicates that anthocyanins found in berries reduce the amount of sugar absorbed from food. This is good news since sugar is the latest culprit in keeping our waistlines expanding.

Load up on fibre:

According to a study by Dalhousie University, increasing fibre intake to 30g a day may promote weight loss. Participants lost on average 5lbs over a 12 month period by just adding extra fibre into their diets but without making any other changes. Nuts, seeds, oats, pulses and beans are all good sources of fibre.

Ingredients:

250g oats
200g Super Berry seed mix
75g desiccated coconut
15g (1 tbsp) coconut oil
1 tsp cinnamon
1/4 tsp vanilla extract
3 tbsp of agave, maple syrup or honey

Method:

Preheat the oven to 180C. Put the oats, Super Berry seed mix and desiccated coconut in a large bowl.
In a small pan, melt the coconut oil, agave (or maple syrup/ honey) and stir in the vanilla extract and cinnamon.

Pour the coconut oil mixture onto the oat mix and combine well by massaging it with your hands.
The texture should be akin to a crumble mixture. Put the granola on a baking tray and bake for 30 minutes to toast the ingredients. Stir every 10 minutes so the top doesn’t burn.

Allow it to cool before transferring it to a clip top jar.
