Pumpkin Seed Butter

A delicious and healthy vegan recipe. So simple as there are only 2 ingredients. Made using our Lightly Toasted pumpkin seeds for extra depth of flavour.

So versatile too – pumpkin seed butter is a good alternative to peanut butter and is so tasty spread on toast, mixed into smoothies, drizzled over yogurt or porridge. It can also be used to make hummus, pesto and stirred into curries or cake mixture for an extra moist texture.

Serve: centre of table.

Ingredients:

all you need is a liquidizer, 500g of our Lightly Toasted Pumpkin Seeds and a dessert spoon of olive oil (which is optional)

Method:

Pour the seeds (and oil if using) into a food processor and blend until smooth. Do this at intervals, as the food processor might get quite hot. It takes 10 to 20 minutes in total so it is best to blend for a few minutes then rest it for a minute or so to cool down.

Blend until you have the consistency you prefer then transfer to an airtight jar. It can be stored for up to 6 months and enjoyed as a snack at any time of the day.

Flavour tip:

If you want to add some extra flavour or sweetness you can include a spoonful of maple syrup and some cinnamon powder.
